Ingredients

  • 14 ounces rigatoni pasta
  • 2 tablespoons olive oil
  • 2 chicken breasts (diced)
  • 2 onions (diced)
  • 1 can chopped tomatoes (about 14 oz)
  • 2 red peppers (diced)
  • 1 pinch chili flakes
  • 2 tablespoons chives

Directions

  1. Cook the pasta in boiling, salted water for 10-12 mins, until tender then drain. Meanwhile, heat the oil in a pan, add the chicken and onions and fry, stirring, for 6-8 mins. Pour in the tomatoes and simmer for 5 mins. Add the peppers and continue to cook for 3-5 mins. Stir in the chili flakes and season.
  2. Mix the pasta into the sauce then divide between 4 bowls. Sprinkle with chives then serve.
