Spicy Chicken and Corn Soup

Ingredients

  • 1 onion (finely chopped)
  • 1 bird's eye chili pepper (seeded and finely chopped)
  • 2 tablespoons flour
  • 3 cups chicken stock
  • 1 pound boneless skinless chicken breasts (cut into thin strips)
  • 4 ears corn-on-the-cob (kernels removed)
  • 1 cup milk
  • 2 tablespoons chopped parsley (freshly)
  • whole-grain bread (to serve)

Directions

  1. Spray the bottom of a saucepan with no stick cooking spray and heat on medium. Add the onion and chili pepper and cook for 3 mins, until soft. Stir in the flour and cook for 1 min. Whisk in the stock and 1 cup water. Bring to a simmer then add chicken. Simmer 3 for mins.
  2. Add the corn kernels and milk and simmer for 7 mins, until the corn is tender and chicken is cooked through. Add the parsley and season to taste. Serve with whole grain bread.
