Ingredients

  • 1 teaspoon chilli powder
  • 1 teaspoon cumin (powdered)
  • 1/4 teaspoon salt
  • 2 chicken breasts (skinless, deboned, and in strips)
  • 3 cups lettuce (assorted, in bite-sized pieces)
  • 1 tablespoon olive oil
  • 1 lime
  • 1 clove garlic, finely chopped
  • salt
  • ground black pepper
  • 2 tablespoons roasted peanuts

Directions

  1. Mix the chili, cumin, and salt. Cover the chicken with this mixture and marinate for 15 minutes in the refrigerator.
  2. Cook the chicken in a hot skillet. Set aside.
  3. Place the lettuce in a salad bowl.
  4. Mix the olive oil, lime juice and zest, and garlic. Season with salt and pepper to taste. Dress the lettuce with this vinaigrette.
  5. Add the chicken, sprinkle the peanuts on top, and serve.

These chicken strips are better than buffalo chicken and can still be dipped in blue cheese dressing. Serve some four inch pieces of thin celery stalks and carrot sticks on the side to be dipped in the dressing too. These quickly became a favorite in our household for football nights.
