Ingredients

1 teaspoon chili powder
1 teaspoon cumin (powdered)
1/4 teaspoon salt
2 chicken breasts (skinless, deboned, and in strips)
3 cups lettuce (assorted, in bite-sized pieces)
1 tablespoon olive oil
1 lime
1 clove garlic, fine chop
salt
ground black pepper
2 tablespoons roasted peanuts

Directions

1Mix the chili, cumin, and salt. Cover the chicken with this mixture and marinate for 15 minutes in the refrigerator.
2Cook the chicken in a hot skillet. Set aside.
3Place the lettuce in a salad bowl.
4Mix the olive oil, lime juice and zest, and garlic. Season with salt and pepper to taste. Dress the lettuce with this vinaigrette.
5Add the chicken, sprinkle the peanuts on top, and serve.
