  • 1/2 teaspoon paprika
  • 1 egg (beaten with ⅓ c. water)
  • 2 tablespoons corn oil
  • 8 ounces tomato sauce (or spaghetti sau)
  • oregano (to taste)
  • 1 cup shredded mozzarella cheese
  • 3/4 cup Seasoned dry bread crumbs
  • 3 boneless chicken breasts (skinned, split, and pounded thin, about 2 lbs.)

    Directions

    1. Dip chicken in bread crumbs, mixed with Parmesan cheese and paprika, then in egg and once more in bread crumbs mixture.
    2. Coat bottom of oblong baking dish with 1 tablespoon oil.
    3. Place chicken in dish and sprinkle with remaining oil.
