Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon cumin seeds
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt (flakes)
  • lemon wedges (to serve)
  • 1 papaya (small, seeded, peeled and diced)
  • 1 avocado (seeded, peeled and diced)
  • 1/2 red onion (finely diced)
  • 1/4 cup chopped parsley (coarsely)
  • 1 lemon (juiced)
  • 2 teaspoons brown sugar
  • 1 red chili pepper (long, seeded and finely chopped)

Directions

  1. Score chicken breasts on one side, at 3/4-inch intervals. Place in a shallow dish. Mix oil, oregano, cumin, cayenne pepper and salt in a small bowl. Rub all over chicken. Refrigerate at least 15 mins to marinate.
  2. Preheat the grill to medium. Grill chicken 5-7 mins each side, until cooked through and lightly charred. Let stand, loosely covered with foil, 5 mins.
  3. Meanwhile, for the papaya salsa, combine all ingredients in a bowl and season to taste.
  4. Slice chicken. Serve with salsa and lemon wedges.
