This basic recipe comes together in 25 minutes, making for a light, crisp salad that is super versatile. You can enjoy this as a side-dish to a piece of grilled meat or try it as the topping on a sandwich. Crisp cabbage is the main player here and it is accented with a dressing made of vinegar, hot sauce, lime juice, and soy sauce. Cilantro and scallions add fresh element, while walnuts add a nice nutty crunch.

  • 2 tablespoons white vinegar
  • 2 tablespoons hot sauce
  • 4 tablespoons olive oil
  • 2 tablespoons soy sauce
  • sugar

  • ground black pepper
  • 2 cups cabbage (shredded)
  • 4 tablespoons fresh coriander (chopped)
  • 1 green onion (finely chopped)
  • 1/4 cup walnuts (chopped)

Directions

  1. Mix the ingredients for the dressing using a fork, including a pinch of sugar. Add salt and pepper to taste if needed.
  2. In a salad bowl, mix the cabbage, coriander, green onion, and walnuts.
  3. Dress the salad and serve.

When I am dieting, this is one recipe I often make. It is low in calories, filling and full of flavor. I enjoy mixing the zests and adding a slice of ham once in a while. I leave out the nuts though.
