Attention all popcorn lovers, now you really can have popcorn for dinner. This light summer salad made with roquette cheese, your favorite greens, fresh grapefruit, and blueberries has an added pop and crunch, popcorn! Make the popcorn in a pan and toss with your favorite spices before sprinkling on top this delicious, and healthy, gluten free salad. Drizzle with olive oil, salt, and pepper for a light and healthy dressing.

Ingredients

  • 1/2 cup popping corn
  • 2 scoops cheese (roquette)
  • 100 grams sprouts (your choice)
  • 1 grapefruit
  • 1/2 cup fresh blueberries
  • olive oil (for seasoning)
  • spices
  • pepper
  • butter oil

Directions

  1. 1Heat butter (or vegetable oil) at the bottom of a wok. Once hot, add the corn kernels.
  2. 2Cover and shake the wok to coat the popcorn well.
  3. 3Once popped, mix popcorn until coated with butter and spices.
  4. 4Place a scoop of roquette cheese on each plate, assemble the shoots and grapefruit.
  5. 5Place the spicy opcorn on top, and arrange the blueberries.
  6. 6Drizzle with little olive oil.
