  • 1 pound sweet potatoes (steamed and mashed)
  • 1 tablespoon chopped cilantro (finely)
  • 1 clove garlic (crushed)
  • 1 teaspoon ground cumin
  • 8 flour tortillas (small)
  • 2 tablespoons olive oil
  • 1 cup crumbled feta cheese

Directions

  1. Combine mashed sweet potato, cilantro, garlic and cumin in a medium bowl. Season to taste.
  2. Spread sweet potato mixture on 4 of the tortillas. Sprinkle with feta and top with a second tortilla.
  3. Heat oil in a large skillet on medium heat. Cook quesadillas in batches for 1 min each side, until crisp. Cut into quarters to serve.
