Ingredients

  • 1/4 cup butter
  • 1 tablespoon olive oil
  • 1 pound pork tenderloin (trimmed, thinly sliced)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 whole star anise
  • 1 apples (large, cored, cut into wedges)
  • couscous
  • 1/2 cup couscous
  • 1/2 cup apple juice (or boiling water)
  • 1 tablespoon butter
  • 14 ounces chickpeas (drained, rinsed)
  • 1/4 cup parsley (roughly chopped)

Directions

  1. Heat butter and oil in a large frying pan on high. Cook pork 2-3 minutes each side, until golden brown. Remove from pan and set aside, loosely covered in foil, to rest.
  2. Add sugar and spices to pan, stirring to combine. Add apples and cook, stirring, until tender and caramelized. Return pork to pan; heat through.
  3. Meanwhile, combine couscous, juice and butter in a large heatproof bowl. Cover and set aside 5 minutes. Fluff with a fork to separate grains. Stir in the chickpeas and parsley and season to taste.
  4. Serve pork and apples on a bed of couscous.
