Description

This variation of a classic just begs to be served with a good cream cheese frosting. Serve it warm with a bit of butter melted into each slice.

Ingredients

240 grams flour (sifted)
200 grams brown sugar
3 large eggs
400 grams carrots (grated)
65 grams walnuts (chopped)
65 grams hazelnuts (chopped)
1 orange
120 milliliters sunflower oil
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla
1/2 teaspoon ground cloves
1/2 teaspoon ground white pepper

Directions

1Preheat the oven to 180 Celsius.
2Beat the eggs and sugar together for 10 minutes with an electric mixer. Add the oil, orange juice, and vanilla little by little while continuing to mix.
3Mix in the flour, cinnamon, cloves, white pepper, baking soda, baking powder, and orange rind. When combined, add the carrot, walnuts, and hazelnuts and mix well.
4Pour the batter into a greased and floured baking pan. Bake for 60 minutes, until an inserted toothpick comes out clean.
5Cool for 5 minutes in the pan until turning out onto a baking rack to cool.
