Ingredients

  • 4 tablespoons sunflower oil
  • 1.5 kilograms pork (sliced into strips)
  • 2 onions (diced)
  • 400 grams button mushrooms (halved)
  • 4 tablespoons plain flour
  • 1.5 liters vegetable stock
  • 6 gherkin pickles (sliced)
  • 100 grams whipping cream
  • 2 tablespoons dijon mustard
  • parsley (to garnish)

Directions

  1. Heat the oil in a pan, add the pork in batches and sear for 3-4 mins. Season then remove all the meat from the pan and set aside.
  2. Add the onion and mushrooms to the pan and sauté for 4-5 mins, stirring occasionally. Season then sprinkle with flour and mix in. Deglaze the pan with stock and gradually pour in the rest, stirring. Add the pork back into the pan and cook over a low-medium heat for 10-15 mins.
  3. Stir in the pickles, cream and mustard and cook for a further 2-3 mins. Sprinkle with parsley before serving.
