Speculoos Curd with Bread Sticks

  • 2 packets curd (mixture)
  • 0.5 liters whipping cream
  • 0.5 liters milk
  • 3 tablespoons brown sugar
  • 3 tablespoons speculoos cream
  • 1/4 tablespoon clove
  • 1/4 tablespoon ginger powder
  • 1 pinch ground nutmeg
  • 40 grams plain yogurt
  • 40 grams mild olive oil
  • 80 grams flour
  • 1 egg
  • 70 grams brown sugar
  • 5 grams baking powder
  • seasoning mix (described above)


  1. Preheat oven to200°C (approximately 400°F).
  2. For the breadsticks, mix all ingredients together.
  3. Bake in a bread stick mold in preheated oven for 20 minutes.
  4. The mixture is enough to fill two baking molds.
  5. For the curd, dissolve both packets of curd mixture in 1 cup milk.
  6. Heat remaining milk and cream and bring to a boil.
  7. When the milk and cream mixture come to a boil, add the cold milk containing the curd mixture. Bring to a boil again, stirring continuously.
  8. When it starts to boil, remove from heat, and add either the speculoos cream (or the spice mix).
  9. Heat to boiling again.
  10. Pour into serving cups and let cool for at least four hours.
  11. To serve, accompany each cup with a bread stick.
