Speculoos Curd with Bread Sticks

2 packets curds (mixture)
1/2 liter whipping cream
1/2 liter milk
3 tablespoons brown sugar
3 tablespoons speculoos spread
1/4 tablespoon clove
1/4 tablespoon ground ginger
1 pinch ground nutmeg
40 grams plain yogurt
40 grams mild olive oil
80 grams flour
1 eggs
70 grams brown sugar
5 grams baking powder
seasoning mix (described above)


1Preheat oven to200°C (approximately 400°F).
2For the breadsticks, mix all ingredients together.
3Bake in a bread stick mold in preheated oven for 20 minutes.
4The mixture is enough to fill two baking molds.
5For the curd, dissolve both packets of curd mixture in 1 cup milk.
6Heat remaining milk and cream and bring to a boil.
7When the milk and cream mixture come to a boil, add the cold milk containing the curd mixture. Bring to a boil again, stirring continuously.
8When it starts to boil, remove from heat, and add either the speculoos cream (or the spice mix).
9Heat to boiling again.
10Pour into serving cups and let cool for at least four hours.
11To serve, accompany each cup with a bread stick.
