Description

Ready-made shortbread cookies and caramel sauce (either store-bought or your own doing) make these surprisingly easy desserts all about the assembly. Crushed cookies, preferably half speculoos and half spritz, are mixed with melted butter and used as the base, which is then topped with the caramel and a layer of sliced bananas and the chilled until firm. Sweetened whipped cream is piped in a decorative fashion and dusted with cocoa powder just before serving.

Ingredients

200 grams shortbread cookies (suggested: half Speculoos and half spritz cookies)
50 grams melted butter
250 grams ganache (white chocolate caramel)
4 bananas (according to their size)
heavy whipping cream (35 cl., mini 30% MG)
2 tablespoons powdered sugar
cocoa powder

Directions

1Crush the biscuits by putting them in a freezer bag and crushing them with a rolling pin.
2Melt the butter and mix with the cookie crumbs.
3Spread this mixture into a large or individual pastry rings... Put in the refrigerator for 20 minutes.
4Pour a layer of white chocolate caramel ganache on the shortbread base.
5Peel the bananas, slice them, and spread them on the caramel. Chill.
6At serving time, whisk the heavy cream until it becomes chantilly, while adding the powdered sugar.
7Remove the pastry circle, and pipe the cream with a pastry bag.
8Sprinkle with cocoa powder.
