Savory speck, chive and buttermilk muffins — made with all-purpose and almond flour — are a tangy, tasty snack or side that's none-to-hard to make.

Ingredients

  • 150 grams flour
  • 30 grams almond flour
  • 2 tablespoons parmesan cheese (grated)
  • 1 teaspoon chives (chopped)
  • 80 grams speck (or smoked ham, roughly chopped)
  • 7 grams baking powder
  • salt
  • 230 grams buttermilk
  • 1 egg
  • 4 tablespoons extra-virgin olive oil

Directions

  1. Preheat the oven to 190 degrees Celsius.
  2. In a bowl, add the flours, cheese, chives, speck or ham, baking powder, and a pinch of salt. Mix well.
  3. In a separate bowl, add the buttermilk, egg, and oil.
  4. Add the dry ingredients to the wet ingredients and mix well.
  5. Spoon the mixture into the muffin pans and fill up to 2/3 full.
  6. Bake for 20 to 25 minutes or until golden brown.

These muffins are savory and robust! I used medium cheddar cheese, rather than parmesan, and doubled the chives. We served them for Sunday brunch with a side of scrambled eggs and a cup of steaming, hot coffee with cream. These will stay on our specialty breakfast menu!
