Description

Savory speck, chive and buttermilk muffins — made with all-purpose and almond flour — are a tangy, tasty snack or side that's none-to-hard to make.

Ingredients

150 grams flour
30 grams almond flour
2 tablespoons parmesan cheese (grated)
1 teaspoon chives (chopped)
80 grams speck (or smoked ham, roughly chopped)
7 grams baking powder
salt
230 grams buttermilk
1 eggs
4 tablespoons extra-virgin olive oil

Directions

1Preheat the oven to 190 degrees Celsius.
2In a bowl, add the flours, cheese, chives, speck or ham, baking powder, and a pinch of salt. Mix well.
3In a separate bowl, add the buttermilk, egg, and oil.
4Add the dry ingredients to the wet ingredients and mix well.
5Spoon the mixture into the muffin pans and fill up to 2/3 full.
6Bake for 20 to 25 minutes or until golden brown.
