With this recipe for Special Olive Oil Salad Dressing you can drizzle your salad or marinate your meat with a tasty dressing that is light and healthy. Made with just three ingredients, sundried tomatoes and basil are added to olive oil to create a robust herb-infused oil. Allow the dressing to infuse for at least 2 weeks before using in order to get the most tomato and basil flavor. Use this herb-infused oil as a dressing, marinade, or in your cooking

Ingredients

  • 250 milliliters olive oil (homemade)
  • 2 tablespoons dried tomatoes
  • basil (to taste)

Directions

  1. Mince the dried tomatoes into very small pieces, and place in a jar.
  2. Add the basil leaves and olive oil.
  3. Close the jar for two weeks.

This special salad dressing was so easy to do; I made it so quickly that I have replaced all my other dressings with it. It has so much flavor and provides a nice coating over our salads.
