Description

Your favorite cereal can now be a part of your baking. These Special K muffins are made with oil and applesauce instead of butter as well as whole wheat flour for a healthy breakfast option. Made with cinnamon, brown sugar, with a few cranberries thrown in, these muffins have a warm taste and are perfect for the wintertime.

Ingredients

  • 100 milliliters milk
  • 2 tablespoons vegetable oil
  • 2 egg whites
  • 200 milliliters applesauce
  • 150 grams Special K Cereal (slightly crushed)
  • 100 grams whole wheat flour
  • 120 grams brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 100 grams cranberries
  • powdered sugar (for garnish)

Directions

  1. 1Preheat oven to 200 degrees Celsius.
  2. 2Line muffin pan with 12-15 cupcake papers.
  3. 3Set aside.
  4. 4In a large bowl, mix the milk, oil, and egg whites.
  5. 5Add all the remaining ingredients, except the powdered sugar, and stir, just until well mixed.
  6. 6Pour batter in pan, and bake about 20 minutes.
  7. 7Remove from oven, let cool, and sprinkle with powdered sugar.
