Description

Just four basic ingredients (and that includes salt) and 25 minutes--plus a trusted skillet--are all that's needed to prepare this simple omelet. Make sure to buy Spanish (yellow) onions, which are milder tasting than white onions, and which are the only other component of the dish. You could crumble in fresh goat cheese or feta cheese during cooking, or sprinkle it on when serving. Enjoy the omelet as a leisurely breakfast or a light weeknight supper, accompanied by a mixed-green salad.

Ingredients

  • 1 tablespoon vegetable oil
  • 2 spanish onion
  • 3 eggs
  • salt

Directions

  1. 1Add the oil to a skillet on medium heat. Add the onions and saute for 8 minutes until softened.
  2. 2Add the onions to a bowl and add the eggs and a pinch of salt. Mix well.
  3. 3Add the egg mixture to skillet on medium heat. Allow the egg to set, about 5 minutes. Flip the omelet and cook for another 5 minutes.
