With every mouthful of this dish there is burst of flavor. The combined ingredients of cheese, sugar, cinnamon and lemon zest bring a savor flavor to this dish. After it is baked there is a beautiful golden brown color that you will not be able to take your eyes off of.

- 1 container ricotta cheese
- 3 eggs
- 200 grams granulated sugar
- 80 grams butter (room temperature)
- 50 grams flour
- 1 tablespoon ground cinnamon
- 1 lemon
- salt
Directions
- Preheat the oven to 175 degrees Celsius.
- Whisk together the ricotta cheese, eggs, sugar, butter, flour, ground cinnamon, lemon zest, and a pinch of salt.
- Grease a pie tin and pour the batter in, making sure there is no more than 3 inches of batter.
- Bake for 40 minutes until golden. Cool and serve.

I love anything Spanish or Mexican but put the word cheesecake in there and I am nearly levitating. One bite and I was in heaven. The only tip I have is to use every bit of that lemon from the juice to the zest, it makes a big difference in the overall end product. Serve this one at your next party, I guarantee very few will have heard of it.
