“Spaghetti” with Turkey & Eggplant Bolognese (Zucchini Noodles)

- 3/4 pound ground turkey (measured raw)
- 1 eggplant (medium, peeled & cut into 1/2″ cubes)
- 1 onion (medium)
- 4 celery stalks (diced)
- 1 tablespoon crushed garlic
- 2 cups marinara sauce (your favorite low-sugar, — I like Dave’s Gourmet because it’s organic and naturally low calorie.)
- red pepper flakes (optional — I like it spicy so I add about 1/2 tsp. Feel free to leave out though.)
- basil
- oregano
- 2 tablespoons parmesan (per person)
