Ingredients

  • 16 ounces spaghetti
  • 2 tablespoons vegetable oil
  • 1 red onion (medium, finely chopped)
  • 2 cloves garlic (minced)
  • 3 1/2 ounces roasted red peppers (thinly sliced)
  • 15 ounces tuna (in brine, drained, flaked)
  • 2 ounces pitted kalamata olives (thinly sliced)
  • 1 teaspoon lemon zest
  • 5 1/4 ounces baby spinach
  • grated parmesan cheese (to serve)

Directions

  1. Cook pasta in boiling salted water for 8-10 mins, or until al dente. Drain.
  2. Meanwhile, heat 1 tbsp oil in a large frying pan over medium-high heat. Cook onion for 5 mins, or until soft. Add garlic. Cook for 1 min, or until fragrant. Add peppers, tuna, olives and lemon zest. Cook for 2 mins.
  3. Add pasta and remaining oil. Remove from heat. Mix in spinach until wilted. Serve topped with Parmesan.
