- 2 ounces spaghetti
- 1/2 pound broccoli (cut into florets)
- 3 tablespoons fresh parsley (chopped)
- 1 1/2 teaspoons olive oil
- 5 teaspoons vegetable stock
- 3 walnut halves
- 1/4 head radicchio (finely sliced)
- Cook spaghetti in boiling, salted water for 6-7 mins, add broccoli and cook for 4-5 mins until pasta is tender.
- Meanwhile, place parsley, oil, stock and walnuts in a food processor and pulse to make a pesto. Season.
- Drain pasta and broccoli then toss with pesto and radicchio.
