Spaghetti with Meatballs

  • 1 1/2 pounds ground beef
  • 1 cup fresh breadcrumbs
  • 1 egg (lightly beaten)
  • 1/3 cup herbs (chopped, such as parsley and oregano)
  • 1/4 cup olive oil
  • 1 onion (finely chopped)
  • 2 cloves garlic (crushed)
  • 2 cups tomato pasta sauce
  • 1 pound spaghetti

Directions

  1. Combine ground beef, breadcrumbs, egg and half of herbs in a large bowl. Season. Roll tablespoons of mixture into balls with wet hands. Heat 2 tbsp of the oil in a large skillet on medium heat. Cook meatballs in 2 batches for 3 mins, until browned and cooked through.
  2. Heat remaining 2 tbsp oil in a large saucepan on medium heat. Sauté onion and garlic for 3 mins until onion is soft. Add tomato pasta sauce, 1 cup water and remaining herbs. Bring to a boil. Add meatballs and simmer for 5 mins.
  3. Meanwhile, cook spaghetti in a large saucepan of boiling salted water according to package directions. Drain and serve with the meatballs.
