Spaghetti with Chicken and Fresh Tomato-Basil Sauce

  • 1 3/4 pounds cherry tomatoes (diced)
  • 2 cloves garlic (peeled and pressed)
  • 2 bunches basil (chopped, some reserved for garnish)
  • 7 tablespoons olive oil
  • 1 teaspoon sugar
  • 2 chicken breasts
  • 1 pound spaghetti
  • 2 ounces parmesan cheese (grated)

Directions

  1. Mix the tomatoes, garlic, basil, 6 tbsp of olive oil and sugar and season to taste.
  2. Heat 1 tbsp of oil in a pan and cook the chicken for about 10 mins, turning as necessary. Cook the spaghetti in boiling salted water according to the package directions. Drain it and keep about 1/2 cup of the cooking water.
  3. Tear the chicken with a couple of forks and mix it with the spaghetti, pesto sauce and pasta water. Serve sprinkled with cheese and basil.
