Spaghetti with Chicken and Fresh Tomato-Basil Sauce

- 1 3/4 pounds cherry tomatoes (diced)
- 2 cloves garlic (peeled and pressed)
- 2 bunches basil (chopped, some reserved for garnish)
- 7 tablespoons olive oil
- 1 teaspoon sugar
- 2 chicken breasts
- 1 pound spaghetti
- 2 ounces parmesan cheese (grated)
Directions
- Mix the tomatoes, garlic, basil, 6 tbsp of olive oil and sugar and season to taste.
- Heat 1 tbsp of oil in a pan and cook the chicken for about 10 mins, turning as necessary. Cook the spaghetti in boiling salted water according to the package directions. Drain it and keep about 1/2 cup of the cooking water.
- Tear the chicken with a couple of forks and mix it with the spaghetti, pesto sauce and pasta water. Serve sprinkled with cheese and basil.
