  • 1 pound spaghetti
  • 1/2 cup olive oil
  • 1/4 cup capers (rinsed)
  • 4 cloves garlic (finely chopped)
  • 1 lemon peel (finely grated)
  • 2 red chili peppers (large, seeded and finely chopped)
  • 1/4 cup lemon juice
  • 1/4 cup grated Parmesan cheese
  • 2 ounces arugula leaves

    Directions

    1. Cook spaghetti in a large pot of boiling salted water according to package directions.
    2. Heat oil in a large skillet on medium heat. Add the capers and cook for 2 mins. Add the garlic, lemon peel and chili peppers and cook for 1 min, or until aromatic.
    3. Drain the pasta, reserving the cooking liquid. Add the pasta along with a little of the cooking liquid to the caper mixture and stir to combine. Stir in the lemon juice, Parmesan cheese and arugula. Season with sea salt and pepper.
