Ingredients

  • 1 tablespoon butter
  • 2 onions (peeled and finely diced)
  • 1 tablespoon sugar
  • 1 teaspoon curry powder
  • 15 ounces chopped tomatoes
  • 3/4 cup tomato purée
  • 1 tablespoon fruit vinegar
  • 1 pound ground beef
  • 1 egg
  • 2 tablespoons breadcrumbs
  • 1 tablespoon tomato paste
  • 2 tablespoons oil
  • 14 ounces spaghetti
  • 2 ounces parmesan cheese (grated)

Directions

  1. For tomato sauce, melt butter in a saucepan and sauté onions. Add sugar and lightly caramelize onions. Add curry powder and cook briefly. Add tomatoes and tomato purée, bring to a boil and simmer for 15 mins. Add vinegar and season.
  2. For meatballs, mix ground beef with egg, breadcrumbs and tomato paste. Season then divide into 40 small meatballs. Heat oil in a frying pan and sauté meatballs. Remove from heat then drain on paper towels.
  3. Meanwhile, cook pasta in boiling salted water. Drain, toss with sauce then transfer to serving plates and add meatballs. Serve sprinkled with cheese.
