Ingredients

  • 3 eggs
  • 1 egg yolk
  • salt
  • ground black pepper
  • garlic powder
  • red pepper (cut in strips, optional)
  • 1 bunch parsley
  • 1 teaspoon grated parmesan cheese
  • pasta
  • spaghetti
  • 1 chopped onion

Directions

  1. Whisk the eggs and egg yolk, and season with salt, pepper, and a pinch of garlic powder.
  2. Add the diced pepper, chopped parsley, and Parmesan cheese, mix well.
  3. Add pasta to the egg mixture, and mix until the pasta is well coated.
  4. In a skillet, saute the onion until translucent.
  5. Add the pasta egg mixture, and cook until golden on both sides.
  6. Serve with a salad.

This easy to make 4 star spaghetti tortilla recipe is my answer to a quick dinner. It is immersed with flavor and has a crispness set throughout the entire dish. The spaghetti is crunchy on the exterior but slightly tender inside.
