This turned out pretty good. Roasted the squash early in the day and squeezed out the water so all I needed to do at dinner time was fold in the seasonings, chive and beaten egg. Then started frying in about a 1/2 tablespoon of flavored coconut oil. I used a cast iron skillet as that is my go to pan for hash browns. Topped the finished product with some shredded cheddar cheese. Made the recipe as is without making any changes. It was a bonus having fresh chives from the garden. Makes a world of difference in the flavor. My wife says it’s a keeper so I’m sure we we will make this again.
