Ingredients

  • 4 ounces bacon (diced)
  • 2 carrots (peeled and finely diced)
  • 1 stalk celery (trimmed and finely diced)
  • 1 onion (peeled and finely diced)
  • 2 tablespoons olive oil
  • 2/3 pound ground beef
  • 29 ounces peeled tomatoes
  • 1/2 cup white wine
  • 1 bay leaf
  • 16 ounces spaghetti
  • 2 tablespoons parmesan (grated)

Directions

  1. To make the sauce, heat oil and fry bacon until crisp. Remove from pan and set aside. Add carrots, celery and onion to pan and sauté. Add beef and cook until browned. Season sauce and add tomatoes, wine, and bay leaf. Bring to a boil, then simmer over medium heat for 30 mins.
  2. Cook spaghetti in plenty of boiling salted water for 8-10 mins.
  3. Drain the spaghetti and serve with the Bolognese sauce. Sprinkle with grated Parmesan.
