Tasty! I used chives from my patio garden in lieu of green onions; in lieu of adding cheese and baking, covered pot after adding diced tomatoes. Simmered for 10 mins. Perfect hint of seasoning!

It was very filling and healthy. We made guacamole to go with it and added mung bean sprouts which improved it immensely but honestly-it could’ve used more flavor

Pretty dull recipe. I think it relies on the cheese because otherwise, there’s not a lot of flavor, and the veggie to quinoa ratio is way off. Too much quinoa, too few veggies. I added rotisserie chicken to mine.

A tasty and quick meal! I made some modifications based on what I had and other reviews. I sautéed the onions and garlic with a diced green bell pepper. Then I added 2 tsp cumin, 2 tsp chili powder, and 1/2 tsp cayenne and let that coat everything before adding the next ingredients. Omitted the yellow bell pepper because I didn’t have one. Added a drained can of unsalted, diced tomatoes and feta cheese at the end. Didn’t bake it.
