Mac and cheese is a staple food in our home. Our kids love it so I love finding new recipes and variations to try. I was excited to see this recipe as it was SO different from my standby homemade macaroni and cheese recipe. I followed the recipe as shown except I only used 1 tsp of cayenne pepper instead of 2 tsp of jalapeno pepper. I didn't have any jalapeno pepper on hand and didn't want to use to much cayenne pepper and have to spicy a dish. I left out the Cotija cheese, again because I didn't have any on hand. I also used full fat cottage cheese versus fat free. That being said the dish turned out ok. It was not a winner in my kid's book. I enjoyed the flavors but felt there was something not quite right about the recipe, perhaps it was the changes I made. That being said, I probably won't make this recipe again.
