  • 1 cup buttermilk
  • 2 large eggs
  • 4 tablespoons butter (melted)
  • 17 ounces corn muffin mix
  • 11 ounces corn (Southwestern style, drained)
  • 1/3 cup red pepper (diced)

Directions

  1. Preheat oven to 350°F. Lightly grease a 9 inch square cake pan.
  2. Whisk together buttermilk, eggs and butter. Stir in corn muffin mix, corn and pepper. Transfer to prepared pan and bake for 30 mins, or until a skewer inserted in the center comes out clean.
