- 1 egg
- 2 oz. avocado
- 2 oz. salsa
- cilantro

Directions
- Sauté veggies with a little olive oil spray, then mix in black beans. Beat one egg and scramble into veggie/bean mixture. Top with avocado, salsa and chopped cilantro…and a squeeze of lime if you like!
