  • 8 ounces sausage (kielbasa, cut in 1/2″ half moons, I used chicken/turkey kielbasa)
  • 1 onion (diced)
  • 2 celery ribs (finely chopped)
  • 1 red bell pepper (stemmed, seeded, and cut into 1/2 inch pieces, I used 1/2 red pepper and 1/2 green pepper)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh thyme (minced, or 1 tsp. dried)
  • 2 tablespoons chili powder
  • 1/8 teaspoon cayenne pepper
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups low sodium chicken broth
  • 2 pounds boneless skinless chicken thighs (trimmed)
  • 2 cups instant rice (I used brown minute rice)
  • 2 scallions (thinly sliced)
