I needed to make a lot of potato salad for an event so I had to double it. Was a hit, but I did need to add more mustard, perhaps because of doubling the recipe.

It was amazing! I also substituted the russets for the gold, but I added four diced slices of bacon and used a tablespoon of the grease in the mayo (Miracle Whip), mustard and relish blend.

This was like my Grandmothers, usually way I fix it, only never used garlic. Don't want to use the garlic my whole family looks forward to my potato salad. Maybe I'll try the garlic next time.

This is the first potato salad I have ever seen without onions. Being from Texas myself, I must question its authenticity. Perhaps "Potato Salad for Acid Reflux Sufferers" would be closer to the truth. Anyway, I halved the recipe and substituted Yukon Gold potatoes which aren't as mealy as russets; much better for potato salad, IMHO. I also added one TB apple cider vinegar, extra salt and pepper, one jalapeno and one serrano pepper (de-seeded and chopped fine), one medium sweet onion chopped fine, and three TB chopped green onions. As for the mustard, I used yellow, but I think Dijon would be better, or maybe just half a TB of mustard powder. Red onion would probably be better, too. With today's modifications, I give this recipe 4.5 stars.

made a few tweeks, very good place to start.. added some Bacon and Bell peppers. come on people we are on here for help, hard to make stuff up just to fill a quota.
