Description
Southern cabbage is a side dish that is super simple but packs a ton of flavor. For a traditional southern-style Thanksgiving, Marrekus Wilkes of Cooks with Soul considers it an essential side dish. He likes to cook it slowly with a ham hock, all-purpose seasoning such as Cooks with Soul Soul Dust (or your favorite brand), and a tablespoon of crushed red pepper flakes — but feel free to start with less heat if you like. - Preheat a 5- to 6-quart Dutch oven or large pot over medium heat. Add oil and ham hocks, bacon, or diced ham and cook until browned, turning meat occasionally, 8-10 minutes.
- Toss in cabbage, onion, all-purpose seasoning, red pepper flakes, and sugar, stirring to combine thoroughly. Add broth and reduce heat to medium-low.
- Cover pot and cook, stirring occasionally, until cabbage is tender and lightly browned, around 1 hour. Cut off the skin from the ham hock and discard it and the bone. Cut the meat into chunks and return to the cabbage. Taste and add more all-purpose seasoning if you like.
