  • 1/2 pound mushrooms (finely chopped, I used Crimini mushrooms, also called Baby Bella)
  • 1 onion (chopped in small dice)
  • 1 cup chopped celery
  • 2 tablespoons olive oil (or more, depending on your pan)
  • 2 tablespoons fresh sage (chopped small, if you only have dried sage, use 1 T)
  • black ground pepper
  • salt
  • 2 cups chicken stock (simmered to reduce to 1 1/2 cups)
  • 2 teaspoons fresh thyme (or use 1 tsp. dried thyme)
  • 1 teaspoon base (Turkey soup, optional but recommended)
  • 1 tablespoon butter
