• 4 pounds Boneless Leg Of Pork (fresh ham)
  • 6 cloves garlic (chopped)
  • 2 cups orange juice
  • 2 teaspoons salt
  • 1 teaspoon cumin
  • 2 teaspoons dried oregano


  1. Preheat oven to 350 degrees F. Chop garlic cloves in slivers and insert into slits in pork made with sharp knife. Mix orange juice, salt, cumin and oregano. Place pork in large shallow pan, pour marinade over pork, cover and marinate in refrigerator overnight. Place pork in a roasting pan and roast for 1 hour to 1 1/2 hours, about 20 minutes per pound, or until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes.
