This recipe for Sourdough Popovers requires just five simple ingredients, a sourdough starter, whole milk, pastry flour, eggs, and salt. You can make your own sourdough starter or inquire after some at a local bakery. Serve the popovers with butter and your favorite jam.

Ingredients

  • 140 grams sourdough starter
  • 250 milliliters whole milk
  • 120 grams pastry flour
  • 3 eggs
  • 1 teaspoon salt

Directions

  1. Preheat the oven to 230 Celsius.
  2. Place the starter, milk, eggs, and salt in a mixing bowl. Stir together and then add the flower.
  3. Heat a muffin tin in the oven, remove, and grease with oil. Pour in the batter and bake for 15 minutes.
  4. Lower the heat to 185 Celsius and bake for 15 minutes more. Remove from oven and allow to cool in the tin slightly before removing.

Getting sour dough starter isn't easy if you don't bake a lot of bread. Go down to your local bakery, and offer to buy a little from them. Bakers know the necessity of having it, so they are usually willing to part with a little bit. There is a way to make your own starter if you're desperate for it. It takes days to do it though. These are delicious and worth the effort.
