Description

A popover is a light hollow roll, similar to a Yorkshire Pudding, made from an egg batter and made in dedicated popover tins, or muffin tins if you are in a pinch. This recipe for Sourdough Popovers requires just five simple ingredients, a sourdough starter, whole milk, pastry flour, eggs, and salt. You can make your own sourdough starter or inquire after some at a local bakery. Serve the popovers with butter and your favorite jam.

Ingredients

140 grams sourdough starter
250 milliliters whole milk
120 grams pastry flour
3 eggs
1 teaspoon salt

Directions

1Preheat the oven to 230 Celsius.
2Place the starter, milk, eggs, and salt in a mixing bowl. Stir together and then add the flower.
3Heat a muffin tin in the oven, remove, and grease with oil. Pour in the batter and bake for 15 minutes.
4Lower the heat to 185 Celsius and bake for 15 minutes more. Remove from oven and allow to cool in the tin slightly before removing.
