Ingredients

250 milliliters milk
3/4 tablespoon yeast
185 grams sourdough starter
85 grams flour
70 grams buckwheat flour (or 60 gr. if sugar was used)
1 teaspoon agave nectar (or 1 1/2 tsps. sugar)
2 eggs
1/2 teaspoon salt

Directions

1Heat the milk and add the yeast, stirring until it dissolves completely. Add the sourdough starter and mix well. Add the flour and buckwheat flour along with the agave.
2Cover the batter and allow to rise until doubled in volume and bubbly, approximately 1 to 1 1/2 hours.
3Separate the eggs and add the yolks to the batter. Set aside for 1 hour.
4Beat the egg whites to form stiff peaks and fold into the batter.
5Heat a flat skillet and melt 1/2 tablespoon of butter. Ladle the batter onto the skillet, creating small rounds. Let cook for a few seconds on one side before flipping, then wait a few seconds more and removing from the pan.
6Keep warm until serving.
