Description

Slices of grilled eggplant make for a showy meal when they're topped with mozzarella and ham, rolled up and baked in tomato sauce until meltingly tender. Served warm, garnished with basil and Parmesan cheese, they can be served with a side of pasta to sop up the extra sauce. The rolls can be assembled and placed in the prepared sauce in advance. Then, just bring the dish to room temperature and bake it according to the directions.

Ingredients

  • 2 eggplant (large)
  • 200 grams mozzarella cheese (sliced)
  • 150 grams ham (sliced into thin strips)
  • tomatoes
  • sauce
  • grated parmesan cheese
  • 3 basil leaves
  • extra-virgin olive oil

Directions

  1. 1Clean and wash the eggplants, then slice them into rounds approximately 1/2 centimeters in thickness, and soak them in cold water for approximately 20 minutes.
  2. 2Rinse the eggplant slices, dry them well and grill them on a griddle.
  3. 3Place a slice of mozzarella cheese and some ham on each slice of eggplant.
  4. 4Roll up each of the eggplant slices.
  5. 5Grease a baking dish and place the eggplant rolls inside.
  6. 6Cover with tomato sauce and sprinkle with the Parmesan cheese.
  7. 7Bake at 180C for 20 minutes.
  8. 8Turn off the oven and let the eggplant rolls rest.
  9. 9Serve the eggplant rolls warm garnished with basil.
