Sorrento-Style Eggplant Rolls

Description

Bread and wheat flour combine to make this simple, fragrant, savory bread. Baked in a ring pan, it's specked with garlic, fresh basil, parsley, rosemary and thyme, though you can substitute these herbs with whatever ones you have on hand. Serve it warm spread with butter or dipped in a bowl of Parmesan and black pepper-laden olive oil.

Ingredients

2 eggplant (large)
200 grams mozzarella cheese (sliced)
150 grams ham (sliced into thin strips)
tomatoes
sauce
grated parmesan cheese
3 basil leaves
extra-virgin olive oil

Directions

1Clean and wash the eggplants, then slice them into rounds approximately 1/2 centimeters in thickness, and soak them in cold water for approximately 20 minutes.
2Rinse the eggplant slices, dry them well and grill them on a griddle.
3Place a slice of mozzarella cheese and some ham on each slice of eggplant.
4Roll up each of the eggplant slices.
5Grease a baking dish and place the eggplant rolls inside.
6Cover with tomato sauce and sprinkle with the Parmesan cheese.
7Bake at 180C for 20 minutes.
8Turn off the oven and let the eggplant rolls rest.
9Serve the eggplant rolls warm garnished with basil.
