Description
Soft, spiced ginger cookies, just like Grandma used to make (or you wished she would!).
Ingredients

- 3/4 cup unsalted butter (softened)
- 1/2 cup light brown sugar (packed)
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 2 tsp. vanilla extract
- 2 1/3 cups all purpose flour
- 1 1/2 tsp. baking soda
- 2 1/2 tsp. ground ginger
- 1 tsp. pumpkin pie spice (or cinnamon)
- 1/2 tsp. salt

Directions
- Line two baking sheets with silicone baking mats or parchment paper. Set aside.
- Place the butter, brown sugar, and granulated sugar in a large mixing bowl. Use a hand mixerand beat on medium speed until well combined, about 1 minute. Add the egg, molasses, and vanilla and continue to beat until smooth, about 30 seconds.
- Sift the flour, baking soda, ginger, pumpkin pie spice (or cinnamon), and salt into the butter mixture. Beat on low speed, scraping sides of bowl with a rubber spatula as needed, until a smooth dough forms.

Excellent. Next time, I would make them smaller. I used maple syrup instead of molasses and it was very yummy.

So easy to make and not overly “spicy “. My autistic kiddo who only likes chocolate chip cookies said these were as good as my chocolate chips. Would be good with walnuts too!

Easy recipe, excellent cookie! :o)
I added abour 3/4c of golden raisins and 1c of pecans. I'm definitely adding this recipe to the rotation, its a keeper!

yeessss. yummy! icing actually took away from the flavor. The cookies themselves are so good and great texture. I added nutmeg and left out the molasses.

These came out delicious! Not your average chocolate chip cookies. I used an ice cream scoop to form the cookies and only got 18. I think these would be really good with some raisins in them as well!

I replace light brown sugar with palm sugar & didn’t pack the dough tightly inside the scoop, resulting in much darker + flatter cookies. The taste is still very good though

My kids loved these!
I will definitely be making more batches of these yummy cookies. (I used golden syrup instead of molasses)

I didn't really have enough molasses or butter but it still turned out really great! I would add more ginger next time I make it though
