- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar (for dough)
- 1 1/2 tsp. vanilla extract
- 1 large egg
- 1 1/2 cups all purpose flour
- 1/2 tsp. cinnamon (for dough)
- 1 tsp. cornstarch
- 1/2 tsp. baking soda
- 1/4 tsp. cream of tartar
- 1/2 tsp. salt (scant, for dough)
- 1 1/2 Tbsp. granulated sugar (for topping)
- 1/2 tsp. cinnamon (for topping)
- 1 pinch salt (for topping)

Directions
- Preheat the oven to 350°F.
- Spray an 8-inch cast-iron skillet with nonstick cooking spray. Set aside.
- Place the softened butter, granulated sugar, and vanilla extract in a large bowl. Use a mixer to cream together on medium speed until pale and fluffy, 1 minute. Add the egg and continue to beat on medium speed until light and fluffy, 30 seconds to one minute.

loved it! i think i accidentally put a bit too much salt, but i ended up topping my slice with ice cream so it wasn't too noticeable! :-)
