  • 2 1/2 pounds round steak (sliced into 1 inch strips and ¼ inch thick)
  • 2 tablespoons essence (Emeril’s, recipe to follow)
  • 3 tablespoons flour
  • 1/4 cup vegetable oil
  • 3 cups beef broth
  • 6 cups onions (sliced)
  • 3 cups green peppers (sliced red and)
  • 1 cup celery (sliced)
  • 3 teaspoons salt
  • 1/2 teaspoon cayenne pepper (you can lessen this or leave out)
  • 1/2 teaspoon black pepper
  • 1 teaspoon chopped fresh parsley
  • 2 1/2 tablespoons paprika (I used smoked paprika)
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
