  • 10 shallots (large)
  • 1/4 cup olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt (for vegetables)
  • 1/2 teaspoon black pepper (for vegetables)
  • 1/4 cup flat leaf parsley (chopped)
