Ingredients

  • 1 kilogram beef stew meat
  • 90 grams speck (cut into cubes)
  • 0.5 liters beer (rauchbier smoked, may substitute a double malt beer)
  • 1 white onion
  • 2 carrots
  • 2 bay leaves
  • 2 tablespoons flour
  • 300 milliliters vegetable broth
  • extra-virgin olive oil
  • salt

Directions

  1. Peel and slice the onion and the carrots.
  2. Place 2 tablespoons of oil in a large saucepan and saute the onion, carrots, speck, and the bay leaf.
  3. Add the meat, coated in the flour, and brown it for 2 minutes.
  4. Pour the beer into the saucepan and allow it to evaporate.
  5. Add the vegetable broth and cook the stew on medium-low for 2 hours.
  6. Serve hot.
