Flavorful and filling. I may throw in a grain next time (rice or quinoa) to make it extra hearty. I also added a few Chile peppers for a nice kick.

This was so quick n easy, there really is no reason to buy canned soup anymore! I tweaked it and added mushrooms, everyone loved it and my mom even asked for some to go:)

On the whole it is a good recipe but I would use dried - prepared cannelloni beans - I cook my beans in a pressure cooker without soaking with Kombu (to reduce gas). I would also use escarole instead of spinach.

I added black pepper to taste, 1 bay leaf and 1 teaspoon of cumin. Cumin seems to brighten the other flavors in soups, as long as you don't over do it.
