Ingredients

  • 6 cups arugula
  • 3 ounces smoked salmon (sliced)
  • 2 hard-boiled eggs (large, chopped)
  • 2 tablespoons dill (snipped)
  • 2 tablespoons oil
  • 2 tablespoons lemon juice
  • 2 tablespoons capers

Directions

  1. In a large salad bowl, combine arugula, salmon, eggs and dill.
  2. To make the dressing, whisk together oil, lemon juice and capers in a small bowl. Season to taste. Pour over salad. Toss to combine. Serve with crusty bread.
