Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 2 teaspoons white wine vinegar
  • 2 apples (sweet, thinly sliced)
  • 1/2 lemon juice
  • 4 stalks celery (thinly sliced on the diagonal)
  • 3 1/2 ounces frisée (endive or other salad greens)
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 8 slices smoked salmon
  • crusty bread (to serve)

Directions

  1. In a small bowl, combine mayonnaise, sour cream, and white wine vinegar and season to taste.
  2. Toss apple in lemon juice to prevent browning. Add celery and mayonnaise mixture and toss to combine.
  3. In a separate bowl, toss salad greens with olive oil and balsamic vinegar.
  4. Spoon apple and celery mixture on four serving plates. Top with salmon slices and salad greens. Serve with slices of crusty bread.
