These appetizers are packed with Salmon and cream cheese. You’ll want to make plenty of them, because they are sure to go fast. Ready in just 20 minutes, they are easy to put together.

Ingredients

  • 12 slices whole wheat bread
  • 6 slices smoked salmon
  • 150 grams light cream cheese
  • 1 lemon (organic)
  • dill
  • ground black pepper

Directions

  1. Remove the crust of the bread slices.
  2. Flatten each slice of bread between 2 sheets of parchment paper with a rolling pin so that they are very thin.
  3. In a bowl mix with a forth cream cheese, the zest of half a lemon and some chopped dill. Pepper lightly.
  4. Spread this mixture over the flattened bread slices.
  5. Roll the slices up gently from one end. Cut each of them in half. Place sideways on a serving dish.
  6. Cut pieces of salmon of approximately 6 centimeters in length.
  7. Roll them and place them at the center of each roll so that they slightly stick out (as shown on the picture.)
  8. Add a little dill and lemon zest in the middle.
  9. Refrigerate until you serve.

I served this at our last Mother’s Day brunch and was really pleased with it. Everyone was asking for the recipe. It is easy to make and is one of my new favorites. Salmon is so good for you too, that’s another plus.
