    This is the recipe my husband learned how to smoke salmon with. It is awesome, and relatively easy to follow.

    In the brine, I added a cup and a half of white wine. I threw on 5 stems of rosemary and smoked it for over 3 hours - starting at 140 and going up to 170. I needed a roasting pan beneath the fish to catch all the juice. LOL. Would definitely make this again.
